Sweet potato is fat free and cholesterol free carbohydrate. Likewise lettuce is a good source of dietary fibre.
This salad is healthy and colourful, with a tangy taste of lemon. Though, most of the tanginess was balanced by the sweet potato.
Thankfully if the sweet potato is really sweet. Then you are good to go.
Use plenty of lettuce. Because lemon juice make lettuce to shrink by osmosis. At the end, the lettuce became smaller and less visible.
•5 medium sized sweet potatoes, cooked
•2 bunch of lettuce
•5 cherry tomatoes
•1 small onion (i don’t like raw onion that’s why i am using a small one, you can add if needed)
•2 seasoning cubes

•In a large bowl, combine potato and lettuce
•Add seasoning cubes
•Squeeze out the lemon juice. Mix all and serve
Serve alone or with jolof rice. Or anything local salad can be served with.
