Potato bites /Potato patties

Potato patties are my favorite snack. They are yummy and irresistible. Whenever i am thinking for a delicious potato recipe, this always be my first option

You can use only breadcrumbs to coat. But i like to combine breadcrumbs with cornflakes because it gives it a coarse appearance which makes it more beautiful

A combination of breadcrumbs and cornflakes. Crush the cornflakes into smaller pieces first, then combine with breadcrumbs. I add spices (garlic and chilli powder) to make the coating superb!

This is how they look immediately after frying; dry. They don’t soak oil if you follow the recipe correctly. They are perfect for breakfast/iftar

Before we go to the recipe, I’ll like to show you some important tips to make a perfect potato pattie:

~Allow the potatoes to cool down completely before mashing. Otherwise patties might be too mushy/watery and end up soaking oil or breaking into pieces in the oil while frying
~Allow the oil to be hot before frying. This made them fry perfectly without soaking any oil. But do not not allow the oil to be too hot, it would burn the patties!
~Make sure the patties are moulded enough, to avoid breakage

I attach a skewer to make it more beautiful, lol. You can skip this.

Ingredients

10 pieces boiled potato
½ cup mince meat filling
1 teaspoon scotch bonnet, (attaruhu) crushed
1 tablespoon scallion (lawashi)
1 teaspoon curry powder 
1 teaspoon mixed spices
1 teaspoon garlic powder 
1 seasoning cube
Oil for frying

For the coating

⅔ cup breadcrumbs
½ cup corn flakes
1 teaspoon chili powder
1 teaspoon garlic powder
1 egg

•Mash the boiled potato, not too soft
•Add scallion, scotch bonnet, curry, seasoning cube, garlic powder and mixed spices
•Add meat filling and mix together
•Using the hands , take some of the mixture and mould into a ball
•Using the other hand, flatten the ball into a pattie
•Do this until the potato is used up
•Combine breadcrumbs with cornflakes (crush the cornflakes to smaller pieces first). Add garlic powder and chilli powder
•Dip each pattie into the egg, the coat with breadcrumbs and cornflakes mixture
•In a pan, heat oil and fry both sides of the patties, till golden brown
•Strain to remove excess oil.
•Serve alone or with a dipping sauce

Things to note:
